Best ever egg mayo

I love egg mayo. It’s a classic for a reason, and it is one of my favourite things to prep as it’s amazing to grab and have on toast, in a sandwich, or crackers even. I pimp mine up slightly with tangy gherkins and spring onions, plus greek yoghurt for the extra protein hit and honestly, it’s just the best, simple lunch. So good.

Bring a pan of water to the boil then gently settle in your eggs. Set your time for 11 minutes, then once the timer goes off, run the eggs under cold water to cool down.
