Marry Me Chicken Enchiladas

So I’ve made a few of these one pan ‘enchilada’ recipes, and I know they’re not enchiladas but not sure what else to call them 😂 The tortillas simply cook in the sauce, and this one has chicken, sun-dried tomatoes, cream and allll the Parmesan…so good 🥰

Nutrition

Turn cooking mode on

Step 1

Spray a pan well with cooking spray then add in your onions along with a pinch of salt, and cook over a medium heat until softened.

1 Onion

Step 2

Next add in your diced chicken, allow to cook for a further 5 minutes or until the chicken is almost cooked through.

400 g Chicken breast

Step 3

Sprinkle over your garlic, dried oregano and paprika, and fry for a further minute.

1 tbsp Garlic granules

1 tbsp Dried oregano

1 tsp Paprika

Step 4

Next add in the sun-dried tomato paste, and cook for a few minutes to let the oils release.

2 tbsp Sun-dried tomato paste

Step 5

Pour in the passata, 200ml of water, and your stock pot, and allow to bubble and thicken slightly.

300 g Tomato passata

1 Chicken stock cube

Step 6

Turn the heat down, add in the Parmesan and cream; stir until fully combined, taste for seasoning, then add in your tortilla strips.

20 g Parmesan

60 ml Single cream

6 Flour tortilla wraps

Step 7

Cook for another couple of minutes allowing the tortillas to soften into the sauce, before sprinkling over the mozzarella.

60 g Mozzarella cheese

Step 8

Pop on a lid, and allow the cheese to melt - you can also pop under a hot grill instead if you’d like a crispy top. Just keep an eye on it!

My boys loved this one which I was surprised at with it being wraps in it as they ca bra but funny with stuff like that 😂😂 and my eldest has taken the leftovers for work which I love!! Definitely making this again xxxxx
