I love a good rice bowl as meal prep, and my go to is always these Mexican beef bowls. They come together in 15 minutes and are perfect hot or cold; they keep brilliantly for up to 3 days in the fridge too. Simple spiced beef, fluffy rice, fresh salad, and a creamy lime yoghurt.
