AUGUST MEAL PLAN WEEK 4

Hey Lovelies! Welcome to the final meal plan for August - and we have a super tasty one this week! Four brand new dinners, including the cosiest egg and bacon ramen and a banging ragu, to slowly ease us into cooler season food. There's a proper mix of summer in there too of course still, and the Nacho Chicken wrap is up there as my new favourite lunch recipe. Okay so these tacos may just be my new favourite way to do breakfast. Crispy sausage smashed straight onto a tortilla, creamy avocado, soft scrambled eggs and crispy bacon, finished with a good drizzle of ketchup. They feel like a proper weekend breakfast, but they’re ridiculously easy to throw together – so perfect if you have 15 minutes to spare on any morning. Feel free to zhuzh them up with any of your fave toppings; feta, herbs, even some salsa here would be banging.

Slow Cooked Beef Ragu

A proper comfort-food situation, and the easiest meal prep you can make as this slow cooker beef ragu is delicious, and so versatile too. It freezes brilliantly, and the Beef cooked low and slow in a rich tomato sauce until it practically melts; I love it piled over pasta with plenty of cheese and served with garlic bread for obligatory sauce-mopping. You can absolutely make this in the slow cooker too, the details are in the recipe.

Cola Gammon with Honey Mustard Glaze

This is one of those recipes that requires almost offensively little effort for how GOOD it tastes, and it’s one of my favourite high protein hacks as ham in the shops is SO expensive now…and nowhere near as tasty. The gammon is slow cooked until beautifully tender, covered in a sticky honey mustard glaze and caramelised in the oven before being pulled apart. Unreal stuffed into warm crusty bread, piled onto mash, or eaten directly from fridge.
