Cajun Chicken and Bacon Sandwich Filler

One of my favourite things to have on hand is a big batch of sandwich filler, ready to grab and go for a day where I don’t have much time or just don’t have the inclination to make lunch yet still want something satisfying and high in protein. This cajun chicken and bacon version is so more-ish, and personally I adore it in a wrap; it’ll keep for up to 3 days in the fridge too.

Turn cooking mode on

Step 1

Spray your chicken generously with cooking spray, then add on your Cajun seasoning and rub until the chicken is fully coated. Spray again with some cooking spray then bake in the oven at 180c for 20 to 25 minutes until fully cooked through. Chop into pieces then set aside.
