Chicken and Chorizo Caesar Sandwich Filler

One of my favourite things to have on hand is a big batch of sandwich filler, ready to grab and go for a day where I don’t have much time or just don’t have the inclination to make lunch yet still want something satisfying and high in protein. This is amazing with bread, on jacket potatoes, or even piled onto some lettuce; it’ll keep for up to 4 days in the fridge too.

Step 1

Add your chorizo to a cold pan, then turn up the heat and allow to cook until crispy and the fat has rendered out. About 6 minutes. Then turn off the heat and set aside.
