Greek Smashed Potato Salad

So I’ve seen the viral smashed potato salad everywhereeee recently so had to give it a go and OMG it is beyond worth the hype 😮‍💨😮‍💨 I went with a kind of Greek salad hybrid situation, with a yoghurt & herb based dressing and it was so fresh & tasty ☺️ 🫶🏼 served with chicken breast for protein, but I reckon some salmon or even prawns would be amazing 🥰

Step 1

Add your potatoes to a pan of cold water, then bring to a boil and allow to cook until just less than tender (about 15 mins for large ones) then drain well and put into a baking tray sprayed with oil spray.
