Soup season is HERE and there is nothing cosier than a big bowl of cosy tomato soup. This one sneaks in 15g of protein per serving too, and is perfect with some croutons if you're taking it into work, or with a big cheese toastie for dinner.

Preheat the oven to 190°C (fan). Add your tomatoes, peppers, and onion to a roasting tray; drizzle over the olive oil along with garlic granules and mixed herbs, and a hefty amount of salt and pepper. Mix until really well coated.

Could this be made without the cottage cheese? Or is there a substitute as I could t get any fat free one in the shopping yesterday. 😔

I’m going to make this too but couldn’t get cottage cheese either, I wondered whether I could substitute with some low fat cream cheese or whether it would be better just leave it out?
