Sweet Chilli Chicken Crispy Rice Salad

I cannot believe it’s taken me so long to make the viral crispy rice salad, because it really is worth every single ounce of hype that it’s had. This version is a sweet chilli chicken take, and it uses things you most likely already have to hand; it’s got a little kick, freshness from the veggies, and then the super satisfying crunch from the rice and chicken. SO good.

Step 1

Line a large baking tray with foil, then add on your rice. Break it up so the grains are all separated, then add the soy sauce, sweet chilli and sesame oil, then mix until fully coated, and make sure it is spread out into an even layer.
