Pat the halloumi dry using kitchen roll, then using a veggie peeler, gently peel the halloumi into long strips from top to bottom. Laying it flat helps and be sure to press into the halloumi as you peel. If some pieces break off, simply start on another side or slice the remaining piece as thinly as you can.
