Sticky Teriyaki Chicken Meatballs

Sticky, sweet, savoury and SO easy – these little chicken meatball bowls are one of my faves and are one of those meals where they taste better the next couple of days. I use a shop bought teriyaki sauce for ease and make a cucumber salad to go on the side so you get a lovely balance of freshness, but any veggies you have in the fridge would be amazing here

Add the chicken mince, spring onions, garlic, cornflour, oil, and soy sauce to a bowl. Season with a little black pepper, then mix until everything is just combined. It will be quite a wet mix, so don’t worry.
