Slow Cooker Beef and Potato Stew

So this barely counts a recipe as our tired girl bestie, the slow cooker, does all the work for us but it’s just the PERFECT easy dinner for when we hit autumn…or now! Tender beef in a rich gravy, with tender veggies, and peas for a little freshness - it’s so comforting and perfect with crusty bread to mop it up!

Notes

Searing the meat makes a big difference to the flavour, but it’ll still be good without if it’s a step too far.

This also makes amazing leftovers and will keep in the fridge for up to 3 days.

Serve on its own or ideally with some crusty bread.
