Easy Veggie Boursin Stuffed Peppers

I don’t know why I don’t share Stuffed Pepper recipes more as they are up there with one of my favourite ever meals 😮‍💨 This version uses rice as the base and is packed full of all the veggies that I had in my fridge that would usually go to waste; I used peppers, onions, mushrooms, and spinach but this is so customisable 🙌🏼 Just add in any veggies or protein you need to use up, and they are taken to the next level of YUM by Boursin Garlic & Herb 👀 The perfect meal prep, with less waste ❤️

To start spray a pan well with some cooking spray, add in your onions and sliced pepper and fry for about five minutes over a medium to high heat until softened; next add in your mushrooms, along with a good pinch of salt, and cook for another few minutes.
