Greek Inspired Chicken & Potatoes

Sooo we’re kicking off day one of my new work lunches series with a good’un Lovelies 😮‍💨 This easy greek inspired protein packed chicken, veggie, and potato Traybake with salty feta is super tasty and one of the lowest faff meal preps for you to throw together for you work week; it’ll keep for up to 4 days in the Fridge, and can either be reheated in the microwave or is delicious cold too ❤️ Plus there’s only one tray to wash up too 👀

Turn cooking mode on

Step 1

Divide your potatoes, courgettes, red peppers and onions between two flat baking trays (that have been sprayed with cooking spray) so they all lay flat in an even layer; drizzle 1/2 a tbsp of oil over each tray followed by 1tbsp of garlic granules, 1 tbsp of your dried oregano and a hefty pinch of salt. Mix well.
