I know we’re heading to spring, but it’s still cold, so I’m still here for soup season and This minestrone is just so warming. This recipe makes a hefty amount, so scale it down if needed, but the leftovers do keep brilliantly in the fridge – oh, and don’t forget a good amount of parmesan at the end either.

be careful that you don’t overfill your slow cooker as it will mean the vegetables won’t cook evenly. Don’t fill more than 2/3 of the way up so scale the recipe down if needed. You can up the protein by adding some cooked chicken or an extra tin of beans too.
