Salsa, Bacon & Cheese Breakfast Burritos
With the weather being colder, it’s warm breakfast season in my house and these delish breakfast burritos with crispy bacon, fluffy scrambled eggs, gooey melted cheese and salsa are such a winner. They’re the perfect easy brekkie and banging dunked into some extra salsa or Greek yoghurt – jalapeños are also a great addition!

Tomato & Bacon Soup with Garlic Butter Puff Pastry Lids
I mean I think we can universally agree there is nothing more comforting than a cheese toastie and tomato soup, but what if we did puff pastry lids instead? So cosy, so simple, and so good!

Pork medallions with cheat’s mushroom and onion gravy
Sometimes only a big bowl of gravy will do, but it’s frowned upon to eat it as a soup, so these lathered gravy pork chops and mushrooms and red onions, are the perfect way to get that fix. Serve with buttery mash and it’s a true hug in a bowl.

Simple breakfast berry crumble with honey yoghurt
How can you beat a good crumble for breakfast? It’s the perfect warming brekkie as we approach the colder days, and is great to prep. Make it the day before, then simply heat up a portion in the microwave when you’re ready to dive on in.

Cheesy Buffalo Ranch Tuna Melt

Gochujang Chicken Ramen
I’m going through a real Ramen phase as the moment, and this super easy Korean inspired creamy chicken ramen is such a midweek winner. It’s rich from the coconut milk, made all in one pan, and a little spicy, slightly sweet, and so cosy. I use quite a lot of gochujang in this so it does have a kick, so if you’d like it milder then start with half as you can always add more! This is great with veggies too, think pak choy, tenderstem broccoli, so good.

Breakfast Sausage Smash Tacos
Okay so these tacos may just be my new favourite way to do breakfast. Crispy sausage smashed straight onto a tortilla, creamy avocado, soft scrambled eggs and crispy bacon, finished with a good drizzle of ketchup. They feel like a proper weekend breakfast, but they’re ridiculously easy to throw together – so perfect if you have 15 minutes to spare on any morning. Feel free to zhuzh them up with any of your fave toppings; feta, herbs, even some salsa here would be banging.

Cheesy Garlic & Leek Gnocchi
There is nothing cosier than a big bowl of cosy gnocchi, creamy, cheesy, garlicky version with buttery softened leeks is genuinely one of my favourites. I tend to serve it with some crispy chicken, or bacon, for the protein and it’s a solid 10/10 every time.

Creamy Marry Me Chicken Wraps
Creamy chicken wraps have been a staple lunch for me for years, and this has all the delicious flavours of the viral marry me chicken, and is uber comforting for now the days are getting colder. The filling can easily be prepped ahead too, just add it to your wraps and toast when you’re ready to eat.

High protein spaghetti hoops on toast
So I can’t call this a recipe, more an idea, but sometimes the simplest meals are the best! It’s a close call but personally I’m team spaghetti hoops over beans, and when you add in sausages, bacon, and toast, you just have the perfect comfort meal…with over 50g of protein too. We really do not cut out the foods we love here!

Slow-Cooker Pulled Brisket & Gravy
There is nothing cosier to me than a big gravy-filled dinner, especially when it’s beautifully tender beef brisket, shredded, with tender carrots, all slow-cooked until it melts in your mouth. It’s so easy, perfect to prep and freeze too, and I love mine served with all the roast trimmings. A must-try, lovelies.
