OCTOBER MEAL PLAN WEEK 4

Hey Lovelies! Welcome to the 4th meal plan for October Lovelies - the weather has turned, and we are full steam ahead into cosy season. There are 4 brand new dinners this week, and a banging brand new wrap for lunch too. Every day has over 100g of protein so we're staying FULL and I cannot wait to see what you think. Here's to a FAB week my dears xxxx

The recipes

Breakfast Sausage Smash Tacos

Okay so these tacos may just be my new favourite way to do breakfast. Crispy sausage smashed straight onto a tortilla, creamy avocado, soft scrambled eggs and crispy bacon, finished with a good drizzle of ketchup. They feel like a proper weekend breakfast, but they’re ridiculously easy to throw together – so perfect if you have 15 minutes to spare on any morning. Feel free to zhuzh them up with any of your fave toppings; feta, herbs, even some salsa here would be banging.

Broccoli and Cheddar Soup

So, soup season is fully here, and I am down for embracing it, so I had to recreate one of my favourite soups of all time: Broccoli and Cheddar. I serve mine with bacon, greek yoghurt and croutons, but it’s fab on its own, and reheats brilliantly, making it the perfect autumnal prep.

Cheesy Sausage, Bacon & Bean Mash Pie

This is my definition of comfort food and again is proof that healthy eating never needs to be complicated. Juicy sausages, smoky bacon medallions and baked beans topped with fluffy mashed potato and plenty of golden, bubbling cheese. 10/10 kiddie meal and perfect with a good squeeze of ketchup!

Creamy Marry Me Chicken Wraps

Creamy chicken wraps have been a staple lunch for me for years, and this has all the delicious flavours of the viral marry me chicken, and is uber comforting for now the days are getting colder. The filling can easily be prepped ahead too, just add it to your wraps and toast when you’re ready to eat.

Pulled Beef & Mash Filled Yorkshire Puddings

Using our tired girl bestie the slow cooker, these stuffed yorkie puds are just the ultimate cosy dinner. The brisket preps brilliantly too and you can easily make it ahead of time too. Just the cosiest winter warmer.

Meal prep sausage and egg muffins

These golden arch dupe muffins really are the most satisfying grab and go breakfast. The egg, sausage and cheese combination is classic for a reason, and I love mine with plenty of ketchup of course.

Pesto Tuna Melt Bagels

If there is one lunch I go back to time and time again it's a tuna melt, specifically a tuna melt bagel, and this pesto version is such a winner. The perfect 10 minute lunch.

Crispy Thai Curry Beef Ramen

Now the weather has turned there is nothing I want more than a big cosy bowl of ramen, and this sticky beef mince ramen is one of my favourites. It’s incredibly quick, stupidly simple, and perfect slurped up under a cosy blanket on the sofa. I love to add a soft-boiled egg too to boost the protein up, and it really mixes well with that broth.

Raspberry and milk chocolate croissant bake

Who doesn’t want an excuse to have pudding for breakfast sometimes? This is the perfect excuse, and the easiest thing to prep too. Just reheat when you’re ready to enjoy, and what beats the combination of raspberries, croissants and chocolate? I top mine with Greek yoghurt for the protein, and it’s just so, so tasty.

Herby Cheese & Onion Chicken Salad

I LOVE a meal-prep lunch that you genuinely look forward to eating, and this is exactly that. A creamy, herby chicken salad packed with mature Cheddar, crunchy red onion, fresh parsley and wholegrain mustard, piled into soft bread with crisp lettuce. It’s so good and perfect to make ahead; keep it in the fridge for up to 3 days, and have it in sandwiches, with crackers, on a salad, or even in a jacket potato! It’s so versatile, and delish.

The ultimate cosy dinner for autumn, this delicious bake has pieces of tender chicken, smoky bacon, sweet leeks and buttery beans in a creamy mustard sauce, finished with a golden, crunchy stuffing topping. Perfect with green veggies, in a big bowl, eaten with a spoon. Gravy is also a 10/10 addition too

High Protein Chocolate Banana Smoothie

Sometimes a smoothie just hits the spot first thing, and there’s no protein powder required for this one! This thick, chocolatey banana smoothie gets all its protein from simple everyday ingredients and gives the vibe of a chocolate milkshake… and who doesn’t want to start the day that way? Frozen banana makes it extra thick and creamy without the need for ice, and the Greek yoghurt and milk pack in that extra protein. So good, under 5 minutes, and brekkie is done.

Salsa Chicken Quesadillas

These Salsa Chicken Quesadillas are the ultimate easy, genuinely 15 minute meal, and are perfect for the days you're a little lower on the energy front but are still wanting something super delicious. I use pre cooked leftover chicken for this, but of course you can cook your own, and it's perfect to be bulked out with any veggies you have - red onion, sweetcorn, peppers, and spinach all work brilliantly here. I love mine with guac and salsa, and a good dash of hot sauce too.
